Black Jack Al Pastor

Ingredients:

2 lbs. Boneless pork shoulder
4 tbl. Achiote paste
1 Can of adobo chipotle peppers
3/4 Cup white vinegar
4 Garlic cloves
3 Limes
1 cup Jack Del Fuego - Black Jack
2 tbl. Oregano
1 tbl. Cumin seeds
3 tbl. Salt
1 tbl. Pepper
1 Medium red onion, sliced
Chopped cilantro
Corn tortillas


STEP ONE

Cut boneless pork shoulder into 2 inch pieces.

STEP TWO

In a blender, combine achiote paste, chipotle peppers, vinegar, garlic, lime juice, Jack Del Fuego - Black Jack hot sauce, oregano, cumin seeds, salt and pepper. Blend well until smooth.

STEP THREE

Pour sauce over the pork in a bowl and cover with plastic wrap. Marinate in the fridge for at least 2 hours.

STEP FOUR

Remove the pork from the marinade. Grill over high heat until charred and just cooked through, 2 to 4 minutes. Transfer to the carving board and let it rest for 5 minutes.

STEP FIVE

Serve with sliced pineapple, red onion slices, chopped cilantro and corn tortillas.
